Mac OsX uses CUPS for printing, so, lately, pretty much all of them are
supported. YMMV, of course.

Also, a while back HP were writing their own open source drivers for
their printers. That gave them some points.
I have a Brother MFC all-in-one (cannot recall the exact model) , The
scanner works fine after there's not ink in some of the cartridges, and ,
as far as I recall , fax is fine as well, however, you cannot print black
and white , even if they are full, unless all cartridges (color) have some
ink in them.
Keep in mind that if you print mostly black and white (greyscale) documents
that a laser printer is MUCH cheaper when you consider the price of toner /
cartridges. Also, inkjet printers use up the color cartridge even if you
only print only greyscale documents (why?).

In both laser and inkjet the cost of the printer is negligable, you must
include the cost of toner / cartridges.

My Canon inkjet print / fax / copy / scan will scan and copy even when the
ink cartridge is empty. But it will not print a greyscale document when the
color cartridge is empty - it uses one cartridge for all colors :-(
I know Brother support Linux. I recommend Laser printers, if you don't do
much printing. I now prefer Samsung printers. usually works out of the box
- no additional software needed (at least in Ubuntu).
I'd recommend visiting the stores near your house, check the service status
(how much it costs to fix and buy Toner etc.). Make note of some of the
models you find interesting and check them against this resource:

OpenPrinting Printer List <http://openprinting.org/printers>

My mom bought the following printer:

Samsung SCX4623F <http://www.zap.co.il/model.aspx?modelid=745898> and she
is very pleased. Haven't tried it with Linux though... This specific model
isn't on the OpenPrint list, but model SCX-4828FN is listed as Perfectly.
This model is the same, just the Networked version.

Tip: Try installing the printer without any drivers first.
Thanks to Amichai, Tom and Guy.

Amichai - I agree that a laser is a better deal because of ink/toner
prices. In fact I have 2 on my home network. But possibly I was not
clear enough in my original question. I'm looking for a CHEAP fax/scan
alternative and it seems that today even the cheapest scanners are more
expensive than cheap multi-function ink-jets. But since I won't use it
at all for printing (only scanning/faxing), the ink will dry up in a
short time and could potentially make the device unusable.

Tom and Guy - since you both mentioned printers that do scan when
there's no ink, I'd be happy to know what specific models. And it goes
without saying that the scanning must work under Linux.

Thanks again.
Mine is Brother MFC-J410W , it is an all-in-one WiFi enabled. All the
announced features worked in LInux .
I actually tested it under Ubuntu 11.10 , the way that Brother provides the
drivers, I don't see a reason why it will
not work under Debian, they do have drivers for the Red-Had family as well.
