[RBS] what to do w/green tomatoes?

As the winter approaches, and the stores sometimes dont have red tomatoes,
here is a delicious alternative salad:
GREEN TOMATO SALAD
1/4 cup fresh parsley
2 tablespoons fresh basil
1 large leaf of sage - optional
1 tablespoon fresh tarragon - optional
4 tablespoons fresh oregano - optional
1 head of garlic, minced
2 tablespoons kosher salt
1/2 cup of extra virgin olive oil
1/3 cup of red wine vinegar
2 teaspoons cracked pepper
8 cups of sliced green tomatoes
3 Hungarian peppers, chopped (these are a mild pepper) - optional
The first part of this process takes some time unless you have a mandolin.
Clean and slice the green tomatoes. Leave the skin on. Place them in a non
reactive bowl. Porcelain, ceramic or glass work best. Sprinkle them
liberally with kosher salt. It is important to use non iodized salt. Let
them sit all day in a cool place. You can leave them sit two nights if you
would like. This process extracts water from the tomatoes and also
tenderizes them. Rinse in cold running water when ready to make the salad.
Mince all the herbs and garlic; add those to the green tomatoes. Pour in
olive oil and vinegar and give it a taste. Add more salt or pepper as you
see fit.
