Saidels Bakery is the ONLY bakery in Israel that makes authentic New York Bialys. What is a Bialy you may ask? Well if you are from New York, chances are you already know the answer to that question.

In short, a Bialy is a round, chewy yeast roll, with an indentation in the center filled with finely chopped onions. It very much resembles a bagel in appearance, but unlike a bagel, there is no hole, it is not boiled before baking, and it is baked for a very short time (4 minutes) at a very high temperature (very much like a pita).

The Bialy originated in Poland and its name is a shortened form of "Bialystoker Kuchen", which in English means "rolls from Bialystok". This was a staple of Polish Jewish cuisine, in many cases the only food many families had to eat, being the basic stomach filler with anything else besides that being the treat at each meal.

The influx of Eastern European Jewry to America around the turn of the 20th century, brought with it this baked delicacy. Due to the large concentration of Polish Jews in the New York area, the Bialy soon became a well known item in now famous bakeries such as Kossars and soon all over the city.

Bialys are delicious with cream cheese and lox and make a perfect partner for almost any savoury topping. Bialys, like bagels, stale very quickly and should be eaten on the same day, as close as possible to the time they were baked. Fortunately they freeze very well and you may store them in the freezer for up to 2 months and pull them out as you need them.
