Hope you enjoyed your fleishig shabbos meals.
Here are today's dairy recipe ideas!

VEGETABLE SOUP

This is one of those "wing it" recipes, but the one trick I find to really
good vegetable soup is the sautéed onion. 

In a large pot sauté a very large onion,  or 2 small ones, over low flame
until golden brown.   Use a generous amount of butter, margarine or canola
or  olive oil, NOT sesame oil .  Add a few liters of water, how many  really
depends on the number of mouths you want to feed.  Bring to a boil.  While
it is coming to a boil, cut up any or all of the following:
carrot
sweet potato
potato
tomato
celery
zucchini 
leek
parsnip
corn 
You can add frozen vegetables like peas or green beans (the quarters work
better than whole ones)
I add a handful of  red lentils or green lentils, the red dissolve more and
add protein 
Add 2 cloves of garlic. Simmer for 1-2 hours on a low flame until all the
vegetables are soft . Add salt and pepper to taste.

Variation: add one or two plastic tubs of tomatoes paste to the water,  and
when adding salt and pepper add oregano and more granulated garlic for a
"pizza" type flavor 


BAKED FISH WITH RICE AND MUSHROOM SAUCE

Pour 1 cup rice in an oven proof pan. Add 1 tsp salt, 2 Tbsl oil 2 cups
BOILING  WATER.  Cover with foil tightly and put in oven ( 160 F) , bake for
45 minutes.
Lay 2 fish fillets over the rice , drizzle with olive oil, spice , put back
in oven, covered for 15- 20 minutes, then uncovered for 10 minutes until the
fish flakes.

Mushroom sauce:
3 Tblspn margarine
1 tsp soy sauce
3/4 cup parve cream or plain soy milk
1 Tablspn flour
canned mushrooms or fresh, cut up in small pieces

Combine all ingredients except flour and mushrooms.  Heat, slowly sprinkle
in flour , mix, add mushrooms, stir over very low flame , thickens slowly.
Pour  over fish and rice when serving.  

This is enough mushroom sauce for a  double or triple recipe of fish, but
it's not as good when cut in half. It CAN be frozen so make it in a parve
pot and serve over burekas on shabbos. 


Kids don't really go for this so try this for them:

CHEESE PANCAKES

3 cups flour (can be whole wheat)
one container cottage cheese
2 eggs
1/4 tsp baking soda 
5 Tablspn sugar or honey
Combine all ingredients, add milk until it's just moist, if you like thin
pancakes add more milk.  Put into heated fry pan with oil or very well
sprayed. When the pancakes bubble they are ready to be flipped over.  

You can add mashed banana, chocolate chips to the  batter too, with mashed
banana they may burn more easily .
