Probiotics (fermented and pickled foods), have been eaten for centuries. They contain live microorganisms, which cleanse the intestines allowing improved digestion, mineral absorption, and strengthening of the immune system to prevent dis-ease.
Kimchi is a daily staple in the Korean diet and sauerkraut has always been a daily staple in Eastern Eurpean countries.
Jews with Ashkenazi ancestry most likely have memories of grandparents putting sauerkraut and pickles on the table. These foods weren't eaten just because they were a vegetable that could be preserved through the winter. They actually preserved people's immunities throughout the winter season. A New York Jew knows well the pickle barrel on Delancy Street.
We will make old-fashioned foods; sauerkraut, pickles and kimchi (Korean hot pickled vegetables.)
