I think you should revisit your assumption... As far as I know, Android
doesn't force you to sync your contacts to Google or anywhere else.
If it did, this would be incredibly weird...
When I create a contact (in Android 2.3.5), it asks me if I want to
"Save contact to" "My device" or "Google".
There's an option to make Google the default choice for this question,
so if you undeliberately did that, you can undo this by, in the
"Contacts" application, pressing the menu button, then "More" and then
"Settings", and there you have a "Save new contacts to" option.

On this, I don't know. Maybe other people can answer this direction.
